Garlic Stir Fry

Garlic Stir Fry Recipe:


Garlic Lovers Welcome



Ingredients:


(You can really use any vegetables you want but this is what I used)


-1/2 zucchini


-1 onion


-1 cup chopped mushrooms


-2-3 TBPs Jarred crushed garlic




Steps:


-Chop everything up


-Place in pan sprayed with PAM


-cook on medium heat until it tastes good to you.




It's that easy, great for a quick but healthy dinner! It's probably better the day after when the garlic soaks in.




Day 2



Ok so its technically day 3 but not for this blog.

Still Kickin'

Today has been good, I didn't quite make it up to my calorie goal but it's only 4:40 right now so who knows. The main reason I didn't is that I was going to have quinoa thats been sitting in the fridge with dinner, but when I dug it out from the back I saw the dreaded and disgusting MOLD. Gah I'm trying to be healthy and bacteria is getting in my way YUCK. I did have a nice dinner, I may post a recipe even though it's just throwing things together in a pan!

Ok so here's what I ate:

B- 1 cup golden grahams, 1/2 cup skim milk, banana
MS- 1 cup blueberries
L-Salad(lettuce, tomato, peas, avocado, balsamic dressing), Boca spicy chicken patty.
AS- 1 cup non fat vanilla yogurt
D- Garlic stirfry (see recipe post)
ES- 2 whole carrots, 2 TBPs tahini

TOTALS: Ate: 1263 Burned: 642

DELICIOUS


Notes* Calories quite low =/, You have no idea how excited I was this morning for Golden Grahams and the fact that I only had one serving! It's so delicious. It's my new favorite food.

Eggplant Recipe

Delicious Baked Stuffed Eggplant



Ingredients:
-1/2 eggplant
-grape tomatoes
-mushrooms
-broccoli
-1 TBPs Olive Oil
-Herbs
-feta chesse

Directions:
-cut an eggplant in half and put half away.
-cut 2 slits length wise in eggplant (on the inside part)
-slice grape tomatoes in half
-slice mushrooms up
-slice broccoli
-rub olive oil on eggplant
-put everything you cut up in the slits on eggplant
-sprinkle herbs/seasonings on top. (I like gralic powder and oregano)
-sprinkle with feta cheese
-Bake at 350 for 20-35 minutes and ENJOY!

Hey All!

First day blogging and begining of my journey. In my posts I will enter food eaten and exercise. I log on livestrong.com. My calorie goal is 1500 a day. So here I go:

Breakfast: Strawberry Oatmeal(1 packet)
Cantaloupe (1 cup)

Morning Snack: Apple with 2 TBPs peanutbutter

Lunch: Salad made with romaine lettuce, sugar snap peas, grape tomatoes, and fat free balsamic vinegar. + a side of black beans (1/2 cup)

Afternoon Snack (pre workout): 1 cup fat free vanilla yogurt

Dinner: Sweet Potato with 1 TBPs light butter, eggplant bake (recipe on next post)

Evening Snack: 13 snyder honey mustard nibblers


Exercise: Jillian Michaels Burn Fat Boost Metabolism DVD


NOTES* That workout is a toughie, it's my third day doing it and I can't even do some of the moves! It is worth it though because I burned 540 calories. But today was a good day, hopefully I'll see a drop in weight soon!
